Garlic dijon Vinaigrette

 This is not low point but is absolutely delicious and worth every point. Also it's thin so a little goes a long way. I also made 1/2 the recipe. Recipe found at Eating Well 

Garlic Dijon Vinaigrette 2sp per Tablespoon

  • 1/2c olive oil
  • 1/2c vinegar you could use rice/balsamic/wine etc
  • 1/2c lemon juice
  • 1/4c dijon mustard
  • 4 small cloves of garlic
  • 1/2 tsp salt
  • freshly ground pepper to taste
I put everything in my blender. 

Makes 28 servings. 


Banana raisin walnut baked oatmeal 3sp

 


Banana raisin walnut baked oatmeal 3sp on purpleplan (found on eating well.com and tweaked)

  • 2 cups of rolled oats
  • 1/3c chopped walnuts
  • 1 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground allspice
  • 2 cups silk unsweetened cashew milk
  • 3/4c plain fat free yogurt
  • egg
  • 2 tbsp applesauce unsweetened
  • 1/4c sukrin gold sweetener
  • 1 tsp vanilla extract
  • banana sliced length wise then sliced
  • 1/3c raisins
  1. preheat oven to 375 and coat an 8x8 inch square baking pan with non stick spray. Next time I would use a bigger pan because these were very thick.
  2. mix oats, walnuts, cinnamon, baking powder, salt and allspice in a large bowl.
  3. mix milk, yogurt, egg, applesauce, sweetener and vanilla.
  4. add the milk mixture to the oat mix and then stir in bananas and raisins.
  5. bake until golden and firm to the touch 45 to 50 minutes bigger pan would take less time to cook

Split pea and ham soup

 


Points depend upon the type and amount of ham you use everything else is 0sp on the purple plan.

Split pea and ham soup 1sp

  • 16oz dried yellow split peas
  • 1 1/2c fat free ham chopped small (I also like to use a ham bone it adds amazing flavor)
  • 1 large carrot diced
  • 1 onion chopped
  • 1 cup of sliced celery
  • 2 cloves of garlic
  • 6 cups of low sodium chicken or vegetable broth
  • after cooking salt and pepper to taste
I like to put everything in the instant pot and put on high pressure for 35 minutes and then let the steam out naturally.

Stir and season with salt and pepper to taste.

Serving is 1 1/2 cups

Cornbread muffins 3sp

 


Cornbread muffins 3sp makes 6

  • 1 cup cornmeal
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3c sweetener (I used half monkfruit and half splenda as I'm trying to cut back on splenda)
  • 1 cup plain fat free Greek yogurt
  • 1 egg
Mix the wet ingredients together.

Mix the dry ingredients together.

Fold the dry ingredients to the wet ingredients

Pour into 6 muffin tins that have been sprayed with non stick spray.

Bake at 375 degrees for 15 - 20 minutes

Superfood Buddha Bowls 3sp

 


I've noticed this on a few sites and decided to make some today :)

I didn't make any bowls to use other days because I have the time to make them fresh. Good to know you can if you want to though.

Superfood Buddha Bowls 3sp depending upon how much avocado you use. Makes 4 bowls. Just put the dressing in a small container and don't add the avocado until you want to eat one.

  • 2 cups of cooked quinoa
  • 6-8 cups of baby kale
  • Canned or cooked beets sliced or diced. 2 cups
  • 1 cup of frozen edamame thawed
  • avocado 
  • 4 tbsp unsalted toasted sunflower seeds
  • DRESSING
  • 1/2c hummus I made my own
  • 2 tbsp lemon juice

Mix together the hummus and the lemon juice and divide into 4 small dressing containers. The hummus I used is 0sp Will post the recipe later.

Into each container add:

  1. 1/2c cooked quinoa 0sp
  2. 1 cup of baby kale 0sp
  3. 1/2c cooked beets 0sp
  4. 1/4c edamame 0sp
  5. 1 tbsp sunflower seeds 1sp
When you are ready to have one just grab a dressing container and add however much avocado you would like to have with it. Today I had 46g which is 2sp.

Creamy scrambled eggs with smoked salmon

 


You can make this any way you like. Use 2 eggs or use different cheese etc. 

This is how I made it today on the purple plan.

Creamy scrambled eggs with smoked salmon 2sp

  • 1 egg and 1/3c liquid egg whites 0sp
  • 1/2 Tbsp light cream 0sp
  • smoked salmon 0sp
  • 2 tbsp of cream cheese I used tofutti better than cream cheese 2sp 
  • pinch of dried dill
I whisked the egg, egg whites and cream together.

I chopped the smoked salmon into medium chunks.

Spray a frying pan with non stick spray or spray with olive oil.

Heat the pan to medium heat.

Scramble the egg mixture and just when cooked add the cream cheese in small pieces and add the  salmon. Lightly fold the eggs, the cheese and the salmon together then place on plate and sprinkle with dill.

Pumpkin French Toast

 


Points depend upon the bread you use. My light bread is 2sp for 2 

Pumpkin French Toast 2sp

  • 2 slices of light bread mine is 2sp
  • 1 egg 0sp
  • 1 tbsp light cream 0sp
  • 2 tbsp pumpkin butter 0sp https://suzanneswwrecipes.blogspot.com/2020/09/pumpkin-butter.html
  • a pinch of pumpkin spice
Mix together the egg, cream, pumpkin butter and spice.

Dip your slices of bread in the mix and fry in a pan sprayed with non stick until browned then turn and brown the other slice.

I served with sugar free pancake syrup 0sp and 2 breakfast sausage 3sp

Berry Scone 1sp

Berry Scone 1sp

  • preheat oven to 375
  • Dry Ingredients
  • 1 cup of flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp splenda
  • Wet Ingredients 
  • 3/4c fat free plain Greek Yogurt
  • 1 egg
  • 1 tbsp lemon juice and lemon zest
Add wet ingredients to dry ingredients.

Fold in 1/2c frozen or fresh blueberries or raspberries or both. I like to use fresh but use frozen when |I don't.

Drop 10 biscuits onto a parchment lined baking sheet.

Bake 20-25 minutes depending on your oven. Mine took less time but I have a wonky oven.

Chocolate cherry oatmeal 0sp

 


A quick but delish breakfast this morning. I love oats, they are so adaptable and tasty.

Well two of my favorite foods are chocolate (yes it's a food lol) and cherries. So that inspired me today.

Chocolate cherry oatmeal 0sp on purple plan

  • 1/3c of quick oats 0sp
  • a bit less than 1/2c cashew milk I love it makes it creamy 0sp
  • 1 tsp unsweetened dark cocoa powder. I actually use black cocoa because I love it. 0sp
  • sweetener of choice 0sp
  • thawed cherries 0sp
  • 14 lily's sugar free chocolate chips 0sp
  • 1 tbsp sugar free pancake syrup 0sp
I just put the oats, milk, cocoa and sweetener in the bowl and microwave for 2 minutes and stir and put back in for a little longer if necessary. Then let sit and it will thicken even more.

Top with the cherries and the chocolate chips then drizzle the syrup on top.

Enjoy!

Update on the pumpkin spice donut 3sp


So I made this last week and I loved them. Well I just took it to the max :)

I took it a step futher today.

I took one out of the freezer to thaw. Then in a small bowl I added 1 tbsp light cream cheese and mixed it with swerve icing sugar replacement and pumpkin spice. Well now it's WOW!

Apple fritter pancakes 3sp

 


Another breakfast I haven't had in a while!

Apple Fritter Pancakes 3sp

  • 1/3c protein waffle/pancake mix I used Flourish today but kodiak would be the same 3sp
  • 1 egg (I like to up the protein) 0sp
  • cinnamon and I add a bit of sweetener
  • water to mix to the right consistency
  • apple peeled and thinly sliced into rings
  • cinnamon/sweetener to sprinkle on top (today I used Epicure apple pie spice mixed with sweetener)
Mixed the pancake ingredients.

Dipped the apple slices in the pancake mix and then cook just like regular pancakes. I try to keep a hole in the middle of the apple slices :)

Sprinkled with cinnamon/sweetener.

Sugar free or light pancake syrup to dip them in.

Bacon, cheese and egg bites 2sp

 



Something different for breakfast today 😀 So much flavor in every bite!

What's great about these bites is that you can use what you have. I used turkey bacon, asiago cheese, egg and jalapeno's. You could use goat cheese, regular bacon, roasted tomatoes, cream cheese, peppers whatever you like and whatever you have!

I used a mini muffin tin today. 

My turkey bacon is wide so I cut it in half length wise and then cut it in small strips for the mini muffin tin.

I put the bacon in first then added the egg.

I put a dob of cream cheese in each and topped with a jalepeno 

  • 1 egg whisked 0sp
  • 1 tbsp Zerto asiago cheese 1sp
  • 1 slice turkey bacon 1sp
  • jalapeno slices
I baked them at 325 sorry I wasn't checking the time as I can see in the window but it would be approximately 8-10 minutes or until puffed up.

Makes 6 mini muffins for 2sp!

Strawberry rhubarb overnight oats 1sp

 


I know not all of us love rhubarb but I'm English and I love it 💗💗

On the weekend I have to get up before the birds so I like quick brekkies! Overnight oats definitely help me with that.

Strawberry rhubarb overnight oats 1sp on purple plan

  • 1/2c quick oats
  • 1/2c vanilla almond breeze 1sp
  • stewed rhubarb
  • frozen strawberries thawed
  • sweetener of choice
  • 2 tbsp plain 0% Greek yogurt for extra protein
  1. mixed the almond breeze, sweetener and the Greek yogurt with a whisk
  2. put 1/4c of the oats in the bottom of the jar
  3. added 1/2 the rhubarb and 1/2 the strawberries on top
  4. add 1/2 the milk mixture on top
  5. put the other 1/4c of oats in the jar
  6. top with the last of the strawberry and rhubarb
  7. pour the last of the almond breeze mixture on top
  8. I took a chopstick and just poked holes down to bottom to help the milk go down :)
  9. put into the fridge overnight
The only points on purple would be for the almond milk.

pb chocolate banana wrap 3sp

 


This is one of my favorite breakfasts that I haven't had for a while.

Pb chocolate banana wrap 3sp

  • Joseph's tortilla 2sp
  • banana 0sp
  • 2 Tbsp pb2 1sp
  • 1 tsp dark cocoa powder 0sp
  • sweetener to taste
  • light/sugar free pancake syrup 0sp
  1. mix the pb2, cocoa powder and sweetener with water
  2. lay out the tortilla and spread the pb2 mix on it. I like to save a bit to drizzle on top.
  3. put your banana in the middle and roll up.
  4. heat a frying pan on medium and put the tortilla in the pan turning the tortilla as it browns and gets crispy.
  5. serve with any leftover pb2 and syrup
I like to serve this with egg/egg whites for added protein.

Shepherd's pie 3sp

 


Shepherd's pie 3sp 6 servings (after putting it in the WW recipe builder for purple plan)

  • 1 lb extra lean ground beef
  • salt, pepper and garlic 
  • 2 cans of mixed vegetables drained
  • 1 tbsp tomato paste
  • 1 packet of gravy mix I use clubhouse lower sodium brown gravy mix
  • 1 onion chopped
  • 8 oz water
  • 3 medium potatoes cubed
  • 1/4c cashew milk
  • 1 tbsp light becel butter spread 
  • salt and pepper to taste
  • 1 tsp smoked paprika
  • 40g light shredded cheddar cheese

Put potatoes in a saucepan full of water and cook until tender. Then mash them with the milk and light butter/margarine. Add salt and pepper to taste. Set aside.

Brown meat. I sprinkled with salt/pepper and garlic. Remove from pan and add onions till lightly browned. Add back in the meat.

Add 1 c water and sprinkle gravy mix on top and stir while heating until it thickens.

Add in the mixed vegetables.

Pour mixture into a non stick sprayed casserole dish.

Top with potato mixture.

Sprinkle paprika on top

Put into a 325 oven or toaster oven for 30 minutes or until nice and hot then take out and put cheese on top. Today my meat mixture was hot, the mashed potatoes were hot so I just put it together and put the cheese right on and just put it in the oven for the cheese to melt.

Bake for another 5 minutes or until cheese is nicely melted.

Serves 6

Pumpkin spice donuts 2sp



I love @ourwasabilife lemon donuts but really wanted to make another fall flavor so I made them with pumpkin spice! Also she makes 12 for 1sp but I prefer to make 8 that are well worth 2sp :) 

Pumpkin spice donuts 2sp

  • 1 cup of flour
  • 1/3c splenda (I used 1/2 splenda and 1/2 monkfruit)
  • 3/4 tsp baking powder
  • 1/3 tsp baking soda
  • pinch salt
  • 1 egg
  • 1/2c Greek yogurt
  • 1/4c unsweetened applesauce
  • 1/4c cashew milk
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon 
For the glaze:

  • 2 tsp sukrin brown sugar
  • 4 heaping tbsp swerve icing sugar
  • pumpkin spice just a bit
  • 3 tsp cashew milk unsweetened if more needed add a bit at a time
Mix dry ingredients together.

Mix wet ingredients together.

Add dry ingredients to wet ingredients.

Spray donut pan with non stick.

I put the dough in a large ziplock and seal then cut the corner so I can pipe it into the donut pan.

Bake for 10-15 minutes in a 350 degree oven. Mine took 10 minutes. You will see that they start to come away from the sides.

Let cool.

Mix glaze ingredients and let it sit to dissolve the brown sugar.

Dip each donut in the glaze. 

Enjoy!

Chocolate strawberry banana breakfast cookies 0sp

 These are 0sp on the purple plan. Depending on the chocolate chips you use etc



Chocolate strawberry banana breakfast cookies Makes 4 large cookies 

  • 3/4c quick oats 
  • 1 egg beaten
  • 1 medium banana mashed
  • 3 or 4 small strawberries chopped small
  • 1/2 - 1 tbsp cocoa powder depending on how much you like or how dark the cocoa powder is you're using. I used black cocoa powder so didn't need to much.
  • Sweetener to taste I usually put 1 pkt in depending on how sweet the banana is. I use monkfruit
  • 14 Lily's mini semi sweet chocolate chips is 0sp and I added a couple on top of each one
  • 1 tsp baking powder
Monkfruit sweetener to sprinkle on top or turbinado sugar (great for a crunch on top)

  1. Mix oats, banana, egg, cocoa powder, sweetener and some of the chocolate chips together
  2. Divide into 4 cookies and put onto parchment paper or non stick sprayed pan
  3. Top with chopped strawberries and sugar free chocolate chips.
  4. Bake at 350 for 8 to 13 minutes depending on your oven/toaster oven
Allow to cool.
They freeze well. 


Thousand Island Dressing 1/4c 0sp

These are delish!

Pineapple upside down pancakes 3sp

Next time I won't sprinkle swerve brown sugar on them as it really stuck!! 

  • 1/3c protein waffle/pancake mix I used Flourish today 3sp
  • 1egg (I add it for added protein)
  • 1/3c or less of almond breeze vanilla 0sp
  • a bit of sweetener
  • pineapple slices that I patted a paper towel on to dry 0sp
  • I sprinkled just a big of sweetener brown sugar but it really made it stick
  • sugar free or light pancake syrup 0sp
I mixed the pancake mix with the egg and almond breeze until just the right consistency and added a little sweetener

Heat pan on stove and spray with non stick

I poured some of the mix in the pan and let it cook a little before adding the pineapple on top. This is when I also sprinkled the brown sugar substitute but won't do that again :)

Flip over and let cook until cooked through. 

Flip over onto a plate and serve with light/sugar free pancake syrup.
