Berry Scone 1sp

 


ladp69 shared this recipe on Connect. I have made it a few time and shared it many times! I love taking one out of the freezer for breakfast or a quick snack. Hope you enjoy it as well.

Berry Scone 1sp

  • preheat oven to 375
  • Dry Ingredients
  • 1 cup of flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp splenda
  • Wet Ingredients 
  • 3/4c fat free plain Greek Yogurt
  • 1 egg
  • 1 tbsp lemon juice and lemon zest
Add wet ingredients to dry ingredients.

Fold in 1/2c frozen or fresh blueberries or raspberries or both. I like to use fresh but use frozen when |I don't.

Drop 10 biscuits onto a parchment lined baking sheet.

Bake 20-25 minutes depending on your oven. Mine took less time but I have a wonky oven.

Update on the pumpkin spice donut 3sp


So I made this last week and I loved them. Well I just took it to the max :)

I took it a step futher today.

I took one out of the freezer to thaw. Then in a small bowl I added 1 tbsp light cream cheese and mixed it with swerve icing sugar replacement and pumpkin spice. Well now it's WOW!

Pumpkin spice donuts 2sp



I love @ourwasabilife lemon donuts but really wanted to make another fall flavor so I made them with pumpkin spice! Also she makes 12 for 1sp but I prefer to make 8 that are well worth 2sp :) 

Pumpkin spice donuts 2sp

  • 1 cup of flour
  • 1/3c splenda (I used 1/2 splenda and 1/2 monkfruit)
  • 3/4 tsp baking powder
  • 1/3 tsp baking soda
  • pinch salt
  • 1 egg
  • 1/2c Greek yogurt
  • 1/4c unsweetened applesauce
  • 1/4c cashew milk
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon 
For the glaze:

  • 2 tsp sukrin brown sugar
  • 4 heaping tbsp swerve icing sugar
  • pumpkin spice just a bit
  • 3 tsp cashew milk unsweetened if more needed add a bit at a time
Mix dry ingredients together.

Mix wet ingredients together.

Add dry ingredients to wet ingredients.

Spray donut pan with non stick.

I put the dough in a large ziplock and seal then cut the corner so I can pipe it into the donut pan.

Bake for 10-15 minutes in a 350 degree oven. Mine took 10 minutes. You will see that they start to come away from the sides.

Let cool.

Mix glaze ingredients and let it sit to dissolve the brown sugar.

Dip each donut in the glaze.
