Split pea and ham soup

 


Points depend upon the type and amount of ham you use everything else is 0sp on the purple plan.

Split pea and ham soup 1sp

  • 16oz dried yellow split peas
  • 1 1/2c fat free ham chopped small (I also like to use a ham bone it adds amazing flavor)
  • 1 large carrot diced
  • 1 onion chopped
  • 1 cup of sliced celery
  • 2 cloves of garlic
  • 6 cups of low sodium chicken or vegetable broth
  • after cooking salt and pepper to taste
I like to put everything in the instant pot and put on high pressure for 35 minutes and then let the steam out naturally.

Stir and season with salt and pepper to taste.

Serving is 1 1/2 cups

Berry Scone 1sp

 


ladp69 shared this recipe on Connect. I have made it a few time and shared it many times! I love taking one out of the freezer for breakfast or a quick snack. Hope you enjoy it as well.

Berry Scone 1sp

  • preheat oven to 375
  • Dry Ingredients
  • 1 cup of flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp splenda
  • Wet Ingredients 
  • 3/4c fat free plain Greek Yogurt
  • 1 egg
  • 1 tbsp lemon juice and lemon zest
Add wet ingredients to dry ingredients.

Fold in 1/2c frozen or fresh blueberries or raspberries or both. I like to use fresh but use frozen when |I don't.

Drop 10 biscuits onto a parchment lined baking sheet.

Bake 20-25 minutes depending on your oven. Mine took less time but I have a wonky oven.

Strawberry rhubarb overnight oats 1sp

 


I know not all of us love rhubarb but I'm English and I love it 💗💗

On the weekend I have to get up before the birds so I like quick brekkies! Overnight oats definitely help me with that.

Strawberry rhubarb overnight oats 1sp on purple plan

  • 1/2c quick oats
  • 1/2c vanilla almond breeze 1sp
  • stewed rhubarb
  • frozen strawberries thawed
  • sweetener of choice
  • 2 tbsp plain 0% Greek yogurt for extra protein
  1. mixed the almond breeze, sweetener and the Greek yogurt with a whisk
  2. put 1/4c of the oats in the bottom of the jar
  3. added 1/2 the rhubarb and 1/2 the strawberries on top
  4. add 1/2 the milk mixture on top
  5. put the other 1/4c of oats in the jar
  6. top with the last of the strawberry and rhubarb
  7. pour the last of the almond breeze mixture on top
  8. I took a chopstick and just poked holes down to bottom to help the milk go down :)
  9. put into the fridge overnight
The only points on purple would be for the almond milk.
