Pumpkin overnight oats 0sp

 


It is made with 0sp ingredients but when put into the recipe calculator it comes out to 2sp so pick which one to go with 😋

I found the recipe on pounddropper.com

These are the ingredients I used today.

  • 1/4c quick oats
  • 1/4c rolled oats
  • 1/2 tsp vanilla extract
  • 2 Tbsp sugar free pancake syrup
  • 1/3 cup of pure pumpkin
  • 1/3c plain fat free Greek  yogurt
  • 1/2c vanilla almond breeze unsweetened
  • 1/2 tsp cinnamon
  • 1/2 tsp pumpkin spice
On top:

  • 2g pumpkin seeds 
  • 1/2 tsp hemp seeds
  • 13 lily's semi sweet sugar free chocolate chips
Add all the first ingredients into a jar and stir together.

Add toppings in the morning.

Enjoy!

Pumpkin French Toast

 


Points depend upon the bread you use. My light bread is 2sp for 2 

Pumpkin French Toast 2sp

  • 2 slices of light bread mine is 2sp
  • 1 egg 0sp
  • 1 tbsp light cream 0sp
  • 2 tbsp pumpkin butter 0sp https://suzanneswwrecipes.blogspot.com/2020/09/pumpkin-butter.html
  • a pinch of pumpkin spice
Mix together the egg, cream, pumpkin butter and spice.

Dip your slices of bread in the mix and fry in a pan sprayed with non stick until browned then turn and brown the other slice.

I served with sugar free pancake syrup 0sp and 2 breakfast sausage 3sp

Update on the pumpkin spice donut 3sp


So I made this last week and I loved them. Well I just took it to the max :)

I took it a step futher today.

I took one out of the freezer to thaw. Then in a small bowl I added 1 tbsp light cream cheese and mixed it with swerve icing sugar replacement and pumpkin spice. Well now it's WOW!

Pumpkin spice donuts 2sp



I love @ourwasabilife lemon donuts but really wanted to make another fall flavor so I made them with pumpkin spice! Also she makes 12 for 1sp but I prefer to make 8 that are well worth 2sp :) 

Pumpkin spice donuts 2sp

  • 1 cup of flour
  • 1/3c splenda (I used 1/2 splenda and 1/2 monkfruit)
  • 3/4 tsp baking powder
  • 1/3 tsp baking soda
  • pinch salt
  • 1 egg
  • 1/2c Greek yogurt
  • 1/4c unsweetened applesauce
  • 1/4c cashew milk
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon 
For the glaze:

  • 2 tsp sukrin brown sugar
  • 4 heaping tbsp swerve icing sugar
  • pumpkin spice just a bit
  • 3 tsp cashew milk unsweetened if more needed add a bit at a time
Mix dry ingredients together.

Mix wet ingredients together.

Add dry ingredients to wet ingredients.

Spray donut pan with non stick.

I put the dough in a large ziplock and seal then cut the corner so I can pipe it into the donut pan.

Bake for 10-15 minutes in a 350 degree oven. Mine took 10 minutes. You will see that they start to come away from the sides.

Let cool.

Mix glaze ingredients and let it sit to dissolve the brown sugar.

Dip each donut in the glaze.

Pumpkin spice waffle 4sp

 

This morning I made this and it was so yummy 💕 that I had to share.

  • 1/2c protein waffle/pancake mix like kodiak. I used @Flourishpancakes mix. You could use 1/3 for 3sp but I used 1/2c for 4sp
  • 1 egg (not necessary but I like added protein with no added sp) 0sp
  • water to add to the mix but you can also add almond milk/cashew milk etc for the amount it would be 0sp
  • pumpkin spice 
  • I like to add a bit of sweetener
Mix altogether and cook in your waffle maker.

Today I added warmed pumpkin butter and sugar free syrup on top!

Pumpkin Butter

 

Oh the smell in the house when cooking this!

It's such an easy recipe and so very tasty. You can use this on oats/toast/crackers etc.

I follow purple and this is 0sp unless you eat the whole thing :)

Pumpkin Butter 0sp

  • 15oz pure canned pumpkin
  • 1 cup unsweetened applesauce
  • 1/4c sugar free pancake syrup
  • 1/2c sweetener of your choice I used 1/2 splenda baking and 1/2 monkfruit
  • 2 tsp of pumpkin spice
  • 1/2 tsp of ground ginger or more if you love ginger
  • 1 tsp vanilla extract
Mix all in pan and simmer on low until reduced, darker colour and thicker. It took me around 40 minutes or you can do it in a slow cooker.
