Pumpkin spice waffle 4sp

 

This morning I made this and it was so yummy 💕 that I had to share.

  • 1/2c protein waffle/pancake mix like kodiak. I used @Flourishpancakes mix. You could use 1/3 for 3sp but I used 1/2c for 4sp
  • 1 egg (not necessary but I like added protein with no added sp) 0sp
  • water to add to the mix but you can also add almond milk/cashew milk etc for the amount it would be 0sp
  • pumpkin spice 
  • I like to add a bit of sweetener
Mix altogether and cook in your waffle maker.

Today I added warmed pumpkin butter and sugar free syrup on top!

Blueberry overnight oats 0sp on Purple Plan



This is always handy when I have to start work at 7am 👀

Blueberry Overnight Oats 0sp on WW purple plan

  • 1/2c oats I used quick oats 0sp
  • 1/2c unsweetened vanilla cashew or almond milk 0sp
  • 2 tbsp plain 0% Greek yogurt
  • sweetener 
  • 1/2c frozen blueberries that I heated in the microwave and then mixed together 1/2 tsp cornstarch and just a little water. Stir in and then just pop back in the microwave for just a few seconds till thickened
I mix the oats, milk, greek yogurt and sweetener.

After the blueberries have cooked and cooled I just scoop them on top of the oats. Put a lid on the jar and pop in the fridge.

Ready for the next morning.

Now I could have added slivered almonds etc but I wanted to keep it 0sp!

Apple Oat bread

 

There's a recipe going around for Grace's Oat bread. This is my tweaked version :)

I have no problem counting ground oats as 0sp. If you do you can keep the rolled oats as is and still make it.

Apple Oat Bread 0sp on the Purple Plan

  • 3 3/4c rolled oats (I ground them in my blender)
  • 2 tsp baking soda
  • 1 cup plain 0% Greek yogurt
  • 1 cup unsweetened applesauce
  • 1/2c sweetener (I used splenda)
  • 1 cup vanilla cashew milk
  • 2 tsp cinnamon, 1/2 tsp ground cloves
  • 2 apples peeled and chopped
Mix altogether. 

I used 3 mini loaf pans or you could use one regular size but I like to freeze some.

Spray your pan/pans with non stick spray.

Divide evenly between pans. I added frozen chopped cranberries to one of mine.

Bake at 350 for 30 minutes for the small ones or 45 minutes for the large one.

Let cool for a few minutes until putting upside down on cooling trays. 

This is a very heavy bread. Not like regular bread. I toast mine and add pumpkin butter and it is divine.

Banana chocolate chip baked French toast

 

This is a lovely breakfast on a weekend or any time you can slow down to make and enjoy this.

Banana chocolate chip baked French Toast 4sp on Purple plan depending upon the ingredients you use

  • I used 2 1/2 slices of light bread 3sp points depend on the bread you use.
  • 1 egg 0sp
  • 1 tbsp cashew milk 0sp
  • 1 banana (mashed but leave 4 slices to put on top)
  • sweetener I used a bit of monkfruit
  • 9g lily's dark sugar free chocolate chips 1sp
  • 1 tsp vanilla extract 0sp
  • I topped it with a sprinkle of monkfruit sweetener for some crunch 0sp
Mash most of the banana leaving a few slices to put on top. Add 1 tbsp cashew milk (or other milk), whisked egg, vanilla extract and sweetener together.

Slice the bread into cubes.

Toss the bread into the wet mixture until just wet. Add most of the chocolate chips leaving a few to put on top.

Spray an oven proof container with non stick spray. 

Add bread mix. 

Top with banana slices, chocolate chips and if you want monkfruit or turbinado sugar for crunch.

I lightly sprayed with pam.

I used my toaster oven and cooked at 325 for 20 minutes or until browned and crispy.

Pumpkin Butter

 

Oh the smell in the house when cooking this!

It's such an easy recipe and so very tasty. You can use this on oats/toast/crackers etc.

I follow purple and this is 0sp unless you eat the whole thing :)

Pumpkin Butter 0sp

  • 15oz pure canned pumpkin
  • 1 cup unsweetened applesauce
  • 1/4c sugar free pancake syrup
  • 1/2c sweetener of your choice I used 1/2 splenda baking and 1/2 monkfruit
  • 2 tsp of pumpkin spice
  • 1/2 tsp of ground ginger or more if you love ginger
  • 1 tsp vanilla extract
Mix all in pan and simmer on low until reduced, darker colour and thicker. It took me around 40 minutes or you can do it in a slow cooker.
